This famous Ras Malai dessert recipe is common in all parts of India and Pakistan. A popular dish during festivals like Ramadan, Eid, Raksha-bandhan and Diwali. There are many different ways to make ras-malai but here I’ll list the easy ones that working women can make easily .
Ingredients For Ras Malai Recipe:
1 ½ cup Milk Powder
4 cups Full Cream Milk
A can of Sweetened condensed Milk (purchased from the market)
3-4 Cardamom or Elaichi (crushed or use elaichi powder)
For Garnishing: Almonds, Pistachios, Cashew-nuts, Kesar / Saffron
Method for Ras Malai Dessert Recipe:
Make a thick paste with eggs and milk powder. Now make small even sized balls out of this mixture and flatten them with your palms and put out on a flat tray making sure they don’t stick to each other.
In a heavy bottom pan, boil 4 cups of milk. As milk comes to a boil, bring the flame on low and add the balls you just laid out on the tray.
Tip: Make sure that the balls do not crush each other. It is advisable to use a wide pan so that all balls get their own space in the liquid.
Let the balls cook in milk for 10-12 mins. Add crushed cardamom and cook for 15 more mins.
By this time, the balls would have expanded in size and the cooked from inside (use a spoon to check if the dough is still sticky inside). Now remove from stove and add condensed milk to this hot mixture.
Refrigerate the ras-malais to enable the mixture to set in and the taste to enhance fully. Serve chilled garnished with sliced almonds, pistachios or strands of Saffron.
